Ingredients

For The Chicken Salad

  • 12 ounces fully cooked chicken breast cubed or shredded
  • 1 ½ cups red grapes
  • 1/2 cup chopped celery
  • 1/4 cup sliced green onions
  • 1 teaspoon chopped fresh tarragon or 1/2 teaspoon dried tarragon

For The Sauce

  • 3/4 cup plain 0-fat Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon stone-ground or Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Cube or shred the fully cooked chicken breast. Also, slice the red grapes in half, chop the celery, slice the green onions, and chop the fresh tarragon.
  • Add the cooked chicken, grapes, celery, and green onions to a large bowl.
  • Add the Greek yogurt, tarragon, fresh lime juice, mustard, garlic powder, salt, and pepper to a separate small bowl. Thoroughly mix the dressing until smooth and combined.
  • Pour the dressing into the bowl with the chicken salad. Thoroughly mix until the chicken salad is evenly coated in the dressing.
  • Enjoy right away or chill this chicken salad in an airtight container in the refrigerator until ready to serve.

Notes

  • Storage: Store leftover chicken salad in an airtight container in the fridge for 2-3 days.
  • Don't Skip The Tarragon: It adds so much flavor. If you can't find fresh, dried works as well.
  • Chicken Options: You can use any fully cooked chicken breast you prefer. Whether it’s grilled chicken breast cut into cubes, slow cooker shredded chicken, tender rotisserie chicken, or even rinsed and drained canned chicken breast.
  • Greek Yogurt Substitution: If you don’t want to use non-fat Greek yogurt, 2% or whole milk Greek yogurt will also work. Or, if you don’t have Greek yogurt, you can swap it with blended cottage cheese.
