SLOW COOKER CHICKEN TACOS

These Slow Cooker Chicken Tacos are effortless, flavorful, and perfect for meal prep. It’s a simple and delicious meal with just five minutes of prep work!

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1, 15-ounce can of tomato sauce
  • 1 packet of taco seasoning (use your favorite brand or try our homemade taco seasoning)
  • 3/4 cup diced white onion

Instructions

  • Season the chicken breasts with salt and pepper.
  • Place the seasoned chicken, tomato sauce, taco seasoning, and diced onion into the slow cooker. After that, stir gently to combine.
  • Cook everything on low for 4-6 hours or on high for 2-3 hours, or until the chicken reaches an internal temperature of 165°F.
  • Once the chicken is fully cooked, remove it from the slow cooker and place it on a cutting board. Use two forks to shred the chicken. Next, place the shredded chicken back in the slow cooker and mix. Then, when ready to serve use the shredded chicken to make chicken tacos with your favorite tortillas and toppings.

Notes

  • Storing: Store leftover shredded chicken in an airtight container in the refrigerator for 3-4 days. Then, it’s ready to go for making tacos throughout the week! Or, you can freeze the shredded chicken in an airtight freezer-safe container for 1-2 months.
  • Optional Additions: Mix in a can of rinsed and drained black beans and a cup of frozen corn for extra texture and flavor.
