SAVORY COTTAGE CHEESE BURRITO BOWL

Ingredients

  • 1 cup fat-free cottage cheese
  • 1/2 cup salsa of choice, we like fresh
  • 1/4 cup black beans
  • 1/4 cup pinto beans
  • 1/4 cup corn fresh, frozen, or canned
  • 1/4 cup diced tomatoes
  • 1 tablespoon diced red onion
  • 1 tablespoon chopped fresh cilantro

Instructions

  • Rinse and drain the pinto beans and black beans. After that, use fresh corn, defrost frozen corn, or drain canned corn. Then, dice the red onion, dice the tomatoes and chop the cilantro.
  • Mix the cottage cheese and salsa. This is the base of your bowl.
  • Add the pinto beans, black beans, corn, tomatoes, and red onion on top of the cottage cheese and salsa mixture.
  • Top with chopped fresh cilantro and enjoy! Some other great optional toppings are additional salsa, sliced avocado, shredded cheese, and a squeeze of lime.

  • Cottage Cheese: Substitute fat-free cottage cheese for low-fat or full-fat cottage cheese if preferred.
  • Corn: Use frozen corn, fresh corn, or rinsed and drained canned corn.
  • Prep: You can prep the ingredients for this cottage cheese bowl ahead of time and store them in an airtight container in the fridge for 3-4 days. When you're ready to serve, mix the salsa and cottage cheese, add the toppings, and enjoy.
