- 1 pomegranate, use the arils
- 1 medium avocado
- 1/2 cup English cucumber
- 1/3 cup frozen corn
- 1/4 cup red onion diced
- 1 small jalapeño seeded and finely diced
- 1/4 cup chopped cilantro
- 1/4 teaspoon salt
- 1/2 of a lime
Cut open the pomegranate and remove the arils to use for this recipe. To cut a pomegranate, make four cuts at the top of the pomegranate in the shape of a square. Then, remove the top of the pomegranate. After that, follow the segmented lines where you made the four cuts and cut down the pomegranate in each area. Then, open up the pomegranate and place the arils in a bowl.
Slice the avocado into even bite-sized pieces. Then, dice the red onion, chop the cucumber, and finely chop the cilantro. After that, remove the seeds from the jalapeño and finely dice it.
Add the pomegranate arils, avocado, cucumber, corn, red onion, jalapeño, cilantro, and salt to a large bowl. Then, freshly squeeze the juice from half of a lime over the ingredients.
Thoroughly mix the salsa, serve, and enjoy!
- How To Cut A Pomegranate: First, make four cuts in the shape of a square on the top of the pomegranate. Then, remove the top of the pomegranate. After that, follow the segmented lines where you made the four cuts and cut down the pomegranate in each area. Then, open the pomegranate and remove the arils. Place the arils in a bowl to use for this salsa. Or, you can buy pomegranate seeds at the store instead of cutting a pomegranate and removing the seeds.
- Finely Dice: When preparing the ingredients, finely dice the jalapeño, cucumber, and red onion so they aren’t overpowering in the salsa.
- Storage: If you have leftover pomegranate salsa, store it in an airtight container in the refrigerator for 6-12 hours. This salsa is best enjoyed fresh.
