PEANUT BUTTER BAKED OATS

- 1/3 cup rolled oats or quick oats
- 2 tablespoons PB2 or PBfit (powdered peanut butter)
- 1/2 teaspoon baking powder
- 1 pinch of salt
- 5 teaspoons sugar or 1:1 sugar-free sweetener
- 1/2 teaspoon vanilla extract
- 2 tablespoons unsweetened vanilla almond milk
- 1 egg
- 1 teaspoon chocolate chips optional
Add the rolled oats or quick oats to a blender. Thoroughly blend the oats into oat flour, or just use oat flour.
Add the PB2 powdered peanut butter, baking powder, salt, sweetener, vanilla extract, and unsweetened vanilla almond milk to the blender and blend.
Lightly pulse in the egg. Optional: Fold the mini chocolate chips into the batter. You can save some to sprinkle on top before baking.
Lightly spray an oven-safe ramekin with coconut oil. After that, pour the batter into the ramekin.
Place the ramekin on a baking sheet and bake at 350°F for 18-20 minutes. Then, let the baked oats slightly cool and enjoy!
- Peanut Butter: You can drizzle with peanut butter or PB2 mixed with water once done.
- Chocolate: You can add more mini chocolate chips if you prefer for more chocolate flavor or omit them altogether.
