PEACH CORN SALSA

This juicy peach corn salsa combines the flavors of fresh ripe peaches and sweet corn. It is the perfect balance of sweet, savory, and tangy flavors.

Ingredients

  • 1 cup chopped peach, 1 large ripe peach
  • 1/2 cup frozen corn or grilled fresh corn
  • 2 tablespoons seeded and finely diced jalapeño
  • 3 tablespoons finely diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice freshly squeezed
  • 1/4 teaspoon salt

Instructions

  • Wash and dry the peach. Then, chop the peach into small even pieces. Next, remove the seeds from the jalapeño and finely dice it. After that, finely dice the red onion and chop the fresh cilantro. Also, if you use frozen corn there is no need to defrost it beforehand, it will come to room temperature in the bowl within about 10 minutes.
  • Add the chopped peach, corn, diced jalapeño, diced red onion, chopped cilantro, freshly squeezed lime juice, and salt to a bowl. Thoroughly mix these ingredients and enjoy! Optional: To allow the flavors to come together even more, you can chill this salsa in an airtight container in the refrigerator for a few hours before serving.
