Equipment

Ingredients

  • 1 vanilla protein shake (11-12 ounces)
  • 1/4 cup cottage cheese blended
  • 1-2 drops peppermint extract not mint extract
  • 1-2 teaspoons sweetener of choice
  • 1 pinch of salt
  • 1 tablespoon mini chocolate chips
  • 2-3 drops of green food coloring optional

Instructions

  • Add the cottage cheese to a blender or food processor and blend until smooth. Or, use an immersion blender to blend it directly in its container.
  • Pour the vanilla protein shake into a large glass measuring cup. Then, add the blended cottage cheese, peppermint extract, sweetener, salt, and optional green food coloring.
  • Thoroughly whisk the ingredients until smooth and combined.
  • Pour the mixture into a Ninja Creami pint container. To help create a flat surface and avoid peaks, place a flat, freezer-safe lid that fits inside the container before securing the Ninja Creami lid. Then, add the Creami lid and freeze it overnight.
  • Remove the pint from the freezer along with the lids, install it in your Ninja Creami machine, and run the “Lite Ice Cream” setting.
  • The protein ice cream may look crumbly or powdery after the first spin. Just add a splash of almond milk or any milk you like, then re-spin using the “Lite Ice Cream” setting once or twice until it’s smooth and creamy.
  • Make a small well in the center of the ice cream and add the mini chocolate chips. After that, run the “Mix-In” cycle. Or, simply top with mini chocolate chips, and enjoy!

Notes

  • Make the Protein Shake: If you don’t have a pre-mixed vanilla protein shake, you can make your own! Simply combine 10 ounces of unsweetened almond milk or your milk of choice with one scoop of vanilla protein powder.
  • Peppermint Extract: Start with 1-2 drops of peppermint extract, as extract strengths can vary. Make sure to use peppermint extract, not mint extract, as the flavor is different. Taste and adjust as needed, adding one more drop at a time until you reach your desired flavor.
  • Cottage Cheese: Fat-free, low-fat, or full-fat cottage cheese all work wonderfully in this recipe.
  • Green Food Coloring: As an option, add a few drops for that classic mint chocolate chip green. It’s purely for presentation, so feel free to skip it!
  • Pudding Mix Option: If desired, for an even creamier texture, you can add 1-2 teaspoons of sugar-free vanilla pudding mix. Or, use 1 tablespoon of regular vanilla pudding mix.
  • Chocolate Chips: You can substitute mini chocolate chips with sugar-free chocolate chips.
