MANGO CORN SALSA
This mango corn salsa is refreshing, bursting with flavor, and easy to make. The mango and corn add sweetness while the lime brightens the dish.

- 1 cup chopped mango, 1 ripe mango
- 1 cup fresh or frozen corn
- 1 medium jalapeño, seeded and finely diced
- 1/4 cup diced red onion
- 1/3 cup chopped red bell pepper
- 1/4 cup chopped fresh cilantro
- 1 ½ tablespoons freshly squeezed lime juice
- 1/4 teaspoon salt
Cut the mango into small bite-sized pieces, avoiding the pit. After that, remove the seeds from the jalapeño and finely dice it. Then, dice the red onion and chop the red bell pepper. Also, chop the fresh cilantro leaves, removing the stems.
Add the mango, corn, jalapeño, red onion, red bell pepper, and cilantro to a large bowl. Squeeze the fresh lime juice over top of the salsa and add the salt.
Thoroughly mix all of the ingredients and enjoy!
- How To Cut A Mango: Wash and dry the mango. Cut vertically along both sides of the pit. Next, score the flesh into cubes without cutting through the skin, then scoop them out with a spoon. After that, repeat for the other side.
- Corn: You can use fresh, frozen, or canned corn for this recipe.
