HEALTHY TATER TOT CASSEROLE

This healthy tater tot casserole is so good and packed with the classic creamy cheesy flavors you crave. It is lightened up and made with ground turkey.

Ingredients

  • 8 ounces cremini mushrooms
  • 1 medium-sized white or sweet onion
  • 1/2 teaspoon chopped fresh rosemary
  • 1/2 teaspoon chopped fresh thyme
  • 1/2 teaspoon chopped fresh oregano
  • 2 cloves garlic crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons Worcestershire sauce
  • 1 pound ground turkey breast
  • 1, 10.5 ounce can semi-condensed or condensed cream of mushroom soup
  • 2 tablespoons milk
  • 1/2 cup light cheese blend
  • 27 frozen tater tots

Instructions

  • Slice the cremini mushrooms and dice the onion. Then, finely chop the fresh rosemary, thyme, and oregano.
  • Lightly spray a pan with olive oil spray. Add the mushrooms, onions, herbs, garlic, salt, pepper, and Worcestershire sauce to the pan. Saute until the onions are translucent and the mushrooms are cooked.
  • Move everything to one side of the pan to make room for the ground turkey. Add your ground turkey breast to the pan. Season both sides of the ground turkey with salt and pepper. Start to cook the turkey and use a spatula to separate it into tiny pieces. Then, combine the sauteed mixture until the turkey is fully cooked.
  • Whisk together the cream of mushroom soup and milk. Add this to the pan once the turkey is fully cooked. After that, combine all of the ingredients in the pan.
  • Transfer everything from the pan to an 11x7 oven-safe baking dish.
  • Sprinkle the light cheddar cheese on top of the casserole.
  • Top with the frozen tater tots. Bake the casserole at 400℉ for 20-25 minutes and enjoy!

Notes

  • Cheese To Use: We used 1/2 cup of Trader Joe’s light cheese blend. Fat-free cheese, light mozzarella, and light cheddar will also work.
  • Herbs: If you don’t have fresh herbs, feel free to use dried herbs, just use half of the amount.
  • Mushrooms Substitution: You can use 8 ounces of corn, broccoli, cauliflower, white mushrooms, or mixed veggies instead if preferred.
  • Cream of Mushroom Soup Swap: If you don’t have cream of mushroom soup, you can make this tater tot casserole with cream of chicken soup.
  • Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days.
