EASY AND HEALTHY COWBOY CAVIAR

This is hands down the easiest way to make cowboy caviar. There is no chopping or prepping involved and it can be made in about two minutes.

Ingredients

  • 12 ounce tub of fresh pico de gallo salsa
  • 15.5 ounce can of black beans rinsed and drained
  • 15.5 ounce can of pinto beans or black eyed peas
  • 1 ½ cups frozen corn or one 15.5 ounce can of corn
  • 1 red bell pepper, 1 avocado, 1/3 cup light feta cheese optional

Instructions

  • Rinse and drain all of the beans. Then, add the beans to a large bowl. If you are using canned corn, rinse and drain it.
  • Add the pico de gallo salsa and frozen corn or rinsed and drained canned corn to the bowl with the beans. Thoroughly mix and enjoy! Optional: Add in sliced avocado, chopped red bell pepper, and light feta cheese.

Notes

  • Protein: To add more protein, add 1 cup of fat-free cottage cheese to a bowl and top with a scoop of cowboy caviar.
  • Corn: Use rinsed and drained canned corn or frozen corn. If you use frozen corn, there is no need to defrost it, just mix it in with the rest of the ingredients.
  • Storage: Store leftovers in an airtight container in the fridge for 2-3 days.
