CRANBERRY PECAN CHICKEN SALAD

- 1 pound fully cooked chicken breast chopped
- 1/2 cup dried cranberries
- 1/3 cup pecans chopped
- 1/2 cup diced celery
- 1 cup diced apple, about 1 large apple
- 1/4 cup diced red onion or sweet onion
For The Sauce
- 1/2-3/4 cup 0-fat Greek yogurt
- 1 teaspoon champagne vinegar or white wine vinegar
- 1/4 teaspoon chopped fresh rosemary or 1/8 teaspoon dried
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Chop the fully cooked chicken into bite-sized pieces. Then, roughly chop the dried cranberries and pecans. Also, dice the celery, apple, and red onion.
Add the cooked chicken, dried cranberries, pecans, celery, apple, and red onion to a large bowl. Mix these ingredients.
Add the 0-fat Greek yogurt, champagne vinegar, rosemary, garlic powder, salt, and pepper to a separate bowl. Thoroughly mix to combine the sauce.
Add the sauce to the large bowl and thoroughly mix the salad. Then, serve or store in an airtight container in the refrigerator.
- Apple: Use a Pink Lady, Granny Smith, or Honey crisp apple for this recipe.
- Chicken: Use fully cooked chicken for this recipe. You can use cooked chicken breast, rotisserie chicken, or drained cooked canned chicken.
- Storage: Store leftover chicken salad in an airtight container in the refrigerator for 2-3 days.
