COTTAGE CHEESE DEVILED EGGS

These cottage cheese deviled eggs are creamy, packed with protein, and so delicious! They’re lightened and made without mayonnaise.

Ingredients

  • 6 hard-boiled eggs
  • 1/3 cup whipped cottage cheese
  • 1/2 teaspoon stone-ground mustard or Dijon mustard
  • 1/8 teaspoon salt
  • 1 pinch pepper
  • 1 pinch paprika for garnish

Instructions

  • Blend the cottage cheese in a blender or food processor until smooth and creamy.
  • Hard-boil the eggs. Once done, remove the shells, slice the eggs in half, and carefully place the yolks in a large bowl.
  • Add the blended cottage cheese, mustard, salt, and pepper to the bowl with the egg yolks.
  • Thoroughly mash until the mixture is smooth and combined.
  • Transfer the filling into a piping bag with a tip or a plastic bag, then cut off a small corner. Pipe the filling evenly into each sliced hard-boiled egg. Garnish with paprika and optional fresh herbs, then enjoy!

  • Herbs: Garnish with optional chopped fresh chives, dill, or parsley for a fresh burst of flavor.
  • Blend The Cottage Cheese: Blend the cottage cheese in a blender or food processor so it’s smooth and creamy in the filling.
  • Use A Bag To Pipe: Place a Ziploc bag in a cup, fold the edges over the rim, and scoop in the filling. Seal the bag, snip off a corner, and pipe the mixture into the sliced hard-boiled eggs.
