- 1 cup cottage cheese full-fat, low-fat, or fat-free
- 1 tablespoon Dutch-processed cocoa powder
- 4 teaspoons maple syrup or sugar-free maple syrup
- 1/4 teaspoon vanilla extract
- 2 teaspoons chia seeds, 2 teaspoons instant pudding mix, or half a ripe banana (to thicken)
Place the cottage cheese in a strainer to remove as much excess liquid as possible. This helps give the pudding a thicker consistency.
Add the drained cottage cheese, Dutch-processed cocoa powder, maple syrup, and vanilla extract to a blender. Choose one of the thickener options and add it to the blender. (Add chia seeds, instant pudding mix, or half a ripe banana.)
Thoroughly blend the ingredients until smooth.
Pour the blended pudding mixture into an airtight container or jar. Chill this pudding for at least one hour before serving to allow it to thicken.
