COTTAGE CHEESE CHOCOLATE MOUSSE

Ingredients

  • 1 cup cottage cheese fat-free, low-fat, or full-fat
  • 2 tablespoons Dutch-processed cocoa powder
  • 2 tablespoons sugar or sugar-free substitute
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whipped topping of choice such as CocoWhip, TruWhip, or sugar-free Cool Whip

Instructions

  • Add the cottage cheese, Dutch-processed cocoa powder, sweetener, and vanilla extract to a blender or food processor.
  • Thoroughly blend until the mixture is smooth and creamy.
  • Pour the mixture into a large bowl. Then, lightly fold in the whipped topping.
  • Transfer the mixture to an airtight container or individual containers. Chill the mousse in the refrigerator for at least 4 hours, or until set. Then, serve and enjoy!

Notes

  • Defrost: Make sure to defrost the frozen whipped topping in the refrigerator according to the package directions before folding it into the mousse.
  • Whipped Topping to Use: You can use your favorite whipped topping! We used CocoWhip, but other great options include TruWhip, sugar-free Cool Whip, or even homemade whipped cream.
  • Cottage Cheese Options: To keep this recipe lighter, use fat-free or low-fat cottage cheese, or for a creamier option, use full-fat cottage cheese. 
  • Drain: If your cottage cheese is extra runny, you can drain it in a strainer before blending to achieve a thicker consistency.
