CORNBREAD FOR ONE
Enjoy single serving cornbread for one with this quick, gluten-free, and dairy-free recipe. It only takes 5 minutes to prepare and is made without cornmeal.

- 1/2 cup rolled oats or quick oats
- 1/2 teaspoon baking powder
- 1 pinch of salt
- 1/4 cup frozen corn
- 2 tablespoons unsweetened almond milk or milk of choice
- 2 teaspoons sweetener, optional if you’re not drizzling honey on top
- 1 egg
Let the frozen corn sit at room temperature and defrost for about 5 minutes.
Place the rolled oats in a blender and blend them until they turn into a flour-like consistency.
Add the baking powder, salt, frozen corn, and unsweetened vanilla almond milk to the blender and thoroughly blend. If you aren’t drizzling honey on top, add two teaspoons of your sweetener of choice to the blender and blend it in.
Add the egg to the blender and lightly pulse it into the batter.
Lightly spray an oven-safe small baking dish with oil. Then, pour the batter into the baking dish.
Place the baking dish on a baking sheet and bake the cornbread at 350° F for 27-30 minutes. Then, let it slightly cool, drizzle with honey, and enjoy!
- Make More Servings: Double this recipe or make as many individual servings of cornbread in baking dishes as you need.
- Corn To Use: If you don’t have frozen corn, you can use fresh corn or rinsed and drained canned corn instead.
- Sweetener: We did not add a sweetener to the batter as we knew we were drizzling honey on top once cooked. If you aren’t adding honey, use two teaspoons of sugar or a 1:1 sugar-free sweetener to sweeten the cornbread.
