CHOCOLATE MUG CAKE IN MICROWAVE

- 3 tablespoons flour
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons monk fruit or sugar
- 1/2 teaspoon baking powder
- 1 pinch of salt
- 2 tablespoons unsweetened applesauce
- 3 tablespoons unsweetened almond milk
- 1/2 teaspoon vanilla extract
- 1 ⅜ teaspoon mini chocolate chips
In a bowl, thoroughly combine the flour, unsweetened cocoa powder, sugar or monk fruit, baking powder, and a pinch of salt.
Then, add the applesauce, unsweetened almond milk, and vanilla extract to the bowl. Thoroughly mix all of the ingredients together and make sure there are no lumps in the batter.
Lightly fold the chocolate chips into the batter. Optional: Add half of the chocolate chips to the batter and the rest on top before microwaving the cake.
Lightly spray a microwave-safe ramekin or mug with oil. Then, pour the mug cake batter into the ramekin or mug. Microwave the chocolate mug cake for 90 seconds on high. Optional: Top with light whipped cream and enjoy!
- Optional Toppings: For an extra treat, we love to add vanilla ice cream or whipped cream on top.
- Chocolate Chips: We recommend using mini chocolate chips for evenly dispersed chocolate flavor.
