BUFFALO CAULIFLOWER SALAD
We have put our own twist on buffalo cauliflower salad. It is packed with the delicious flavors of buffalo ranch and is easy to mix together.

- 1 large head of cauliflower, chopped into small bite-sized pieces
- 1/3 cup diced red onion
- 1 cup chopped celery
- 1/2 cup 0-fat greek yogurt
- 1 tablespoon light mayonnaise
- 1 tablespoon ranch powder
- 2 tablespoons hot sauce, we used Frank’s
- 1 teaspoon garlic powder
- 1 teaspoon milk
Cut the cauliflower into bite-sized pieces. Then, fill a saucepan with water and a pinch of salt over the stove. Once the water is boiling, add the cauliflower and boil it for 2-3 minutes. Make sure to check the cauliflower so it doesn’t overcook and become mushy. You still want a crunch. Next, blanch the cauliflower in cold water with ice cubes or you can run cold water over it once it is done boiling to stop it from cooking further.
Dice the red onion and chop the celery. Then, add the cauliflower, red onion, and celery to a large bowl.
Combine the 0-fat greek yogurt, light mayonnaise, ranch powder, hot sauce, garlic powder, and milk. Add the sauce to the bowl with the rest of the ingredients. Thoroughly mix everything and enjoy!
- Hot Sauce: We used Frank’s RedHot Original Hot Sauce in this recipe. Frank’s Buffalo Wings Sauce or your favorite hot sauce are other great options.
- Heat: We used 2 tablespoons of hot sauce in this recipe for a kick of heat. You can use more or less hot sauce depending on your heat preference.
- Storage: This cauliflower salad is best enjoyed within 2-3 days when stored in an airtight container in the refrigerator.
