BREAKFAST BURRITO BOWL

This is the ultimate breakfast burrito bowl! We have taken the classic crave-worthy flavors of a breakfast burrito and combined them in bowl form.

Ingredients

  • 2 eggs
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon pepper
  • 1/2 cup roasted or air-fried diced potatoes
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced tomatoes
  • 1-2 sliced green scallions or 1 tablespoon diced red onion
  • 1-2 teaspoons chopped fresh cilantro
  • 1/4 cup shredded light Mexican cheese blend
  • 2 tablespoons salsa use your favorite
  • 2 tablespoons 0-fat Greek yogurt optional
  • 1 tablespoon sliced jalapeño peppers optional
  • sliced avocado optional

Instructions

  • Cook the eggs any way you like and season them with salt and pepper. We scrambled the eggs.
  • Make our air fryer diced potatoes and add them to the bowl. Or, prepare and cook potatoes to your liking.
  • Add the cooked eggs to your bowl. Then, add the potatoes, rinsed and drained black beans, diced red bell pepper, diced tomatoes, sliced green scallions, chopped cilantro, and cheese to the bowl.
  • Add your favorite optional toppings such as sliced jalapeño, avocado, or your favorite additions.
  • Mix the salsa with Greek yogurt for a creamy consistency, and then drizzle it over the bowl. Or, if you prefer, just add salsa to the bowl.

  • Eggs: Prepare the eggs any way you prefer. Some options are scrambled eggs, sunny side up, fried eggs, or poached eggs.
