BLUEBERRY BAKED OATS RECIPE

These blueberry baked oats are the ultimate easy and healthy breakfast recipe. Every bite is packed with bursting blueberries!

Ingredients

  • 1/2 cup rolled oats or quick oats
  • 1/2 teaspoon baking powder
  • 1 pinch of salt
  • 2 teaspoons lemon juice
  • 1/8 teaspoon lemon zest
  • 5 teaspoons monk fruit, sugar, or sweetener of choice
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons unsweetened vanilla almond milk
  • 1 egg
  • 1/3 cup fresh blueberries

Instructions

  • Preheat your oven to 350°F. Then, place the rolled oats or quick oats in a blender and thoroughly blend them until you have oat flour.
  • Add the baking powder, salt, lemon juice, lemon zest, sweetener of choice, vanilla extract, and milk of choice to the blender. Blend these ingredients.
  • Lightly pulse in the egg with the rest of the ingredients.
  • Wash and dry the fresh blueberries. Then, lightly fold them into the batter. Optional: Save some of the blueberries for the top before baking.
  • Lightly spray an oven-safe ramekin with coconut oil or olive oil. Pour the batter into the ramekin. Optional: Add some blueberries on top.
  • Place the ramekin on a baking sheet. Bake the baked oats at 350℉ for 25-27 minutes or until they are cooked. Let the blueberry baked oats slightly cool and enjoy!

Notes

  • Frozen Blueberries: If you use frozen blueberries, make sure to rinse them with water and make sure they are completely dried. We recommend letting them dry on a paper towel. Also, it would be best to toss them in some oat flour to absorb any moisture. Then, you can fold them into the batter.
  • Oats To Use: Baked oats are best with old-fashioned rolled oats or quick oats. The oats will be blended into oat flour. If you have oat flour, feel free to use that instead of blending the oats. Don't use steel-cut oats.
