BANANA COTTAGE CHEESE PANCAKES

Ingredients

  • 1 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup fat-free cottage cheese
  • 2 ripe medium bananas
  • 2 tablespoons milk of choice
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  • Add the rolled oats to a blender and thoroughly blend them into oat flour. Or, you can just use oat flour if you have it.
  • Add the baking powder, cinnamon, cottage cheese, ripe bananas, milk, vanilla extract, and egg to the blender. Then, blend these ingredients. Ensure all the ingredients are combined, scraping down the sides of the blender if necessary.
  • Lightly spray a large skillet with oil over medium-low heat on the stove. Pour the batter into the skillet to form the pancakes. Cook the pancakes for 2-3 minutes on each side, or until fully cooked, flipping once bubbles start forming around the edges and center.
  • Once all the pancakes are cooked, serve, add optional toppings such as fresh fruit or a drizzle of maple syrup, and enjoy!

Notes

  • Optional Additions: Sprinkle mini chocolate chips or chocolate chunks onto the pancakes while cooking for a burst of chocolate flavor. Or, add fresh or frozen blueberries to your pancakes, or your favorite fruit.
  • Cottage Cheese To Use: For this recipe, we used fat-free cottage cheese, but you can easily swap it for low-fat or full-fat cottage cheese, depending on your preference.
  • Protein: For an extra boost of protein, add 1-2 tablespoons of vanilla protein powder.
