BANANA BREAD BAKED OATS

- 1/3 cup quick oats or rolled oats
- 1/2 teaspoon baking powder
- 1 pinch of salt
- 5 teaspoons monk fruit, sugar, or sweetener of choice
- 1/2 teaspoon cinnamon
- 1 pinch of nutmeg
- 1/2 teaspoon vanilla extract
- 1/3 cup mashed banana, about one small ripe banana
- 1 egg
Blend the quick oats into oat flour.
Add the baking powder, salt, sweetener of choice, cinnamon, nutmeg, vanilla extract, and banana to the blender and blend.
Lightly pulse in the egg.
Lightly spray an oven-safe ramekin with coconut oil. Then, pour the batter into the ramekin.
Place the ramekin on a baking sheet and bake at 350° F for 26-28 minutes. Let the baked oats slightly cool and enjoy!
- Banana: You will need 1/3 cup of mashed banana for this recipe, which is about one small banana.
- Chocolate: You can add chocolate chips to these banana bread baked oats for some chocolate flavor.
