Preheat your air fryer to 380°F.
Wash and dry the sweet potatoes. Leave them unpeeled, or peel them if desired. Then, cut the ends off the sweet potatoes. After that, cut them in half lengthwise. From there, evenly cut each half into 1/4-inch thick wedges.
For extra crispiness, soak the sweet potato wedges in a bowl of cold water for 30 minutes to remove excess starch. Then, thoroughly pat them dry with paper towels.
Place the sweet potato wedges in a large bowl. As an option, add the cornstarch and toss to coat the wedges evenly. This helps achieve a crispier texture.
Add the olive oil, ground cinnamon, garlic powder, onion powder, smoked paprika, salt, pepper, and optional chili powder to the sweet potato wedges. Toss until all of the wedges are evenly coated with the seasonings.
Place the seasoned sweet potato wedges in your air fryer basket in a single layer. You may need to cook them in batches, depending on the size of your air fryer, to avoid overcrowding.
Air fry the sweet potato wedges at 380°F for 18-22 minutes, shaking the basket halfway through for even cooking.
Once done, carefully remove the wedges from the air fryer basket and serve them warm with your favorite dipping sauces.
