Ingredients

  • 1.5 pounds baby potatoes, we used Dutch yellow potatoes
  • 1 teaspoon olive oil
  • 1/2 ounce freshly grated parmesan cheese
  • 1/2 teaspoon garlic powder or 1 clove garlic, crushed
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon basil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  • Wash the potatoes. Then, chop them into small even sized pieces, about 1/2-1 inch.
  • Optional: Add the chopped potatoes to a large bowl filled with cold water to soak for 10-15 minutes. It removes some of the starches from the potatoes and helps ensure they are crispy. Once done soaking, remove them from the water and pat them dry with a paper towel before seasoning.
  • Freshly grate the parmesan cheese.
  • Add the chopped potatoes to a large bowl. Then, add the olive oil, freshly grated parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper to the bowl.
  • Thoroughly mix to coat all the potatoes.
  • Add the potatoes to the air fryer basket. We like to add a parchment paper liner first for easy cleanup. Don’t overcrowd, you may need to cook them in batches.
  • Air fry the parmesan potatoes at 400°F (200°C) for 11-13 minutes, shaking the basket halfway. Once done, remove the potatoes from the air fryer and let them slightly cool before enjoying. Optional: Freshly grate more parmesan cheese over top of the potatoes.

Notes

  • Storage: Store leftover air fried parmesan potatoes in an airtight container in the refrigerator for 2-3 days.
  • Potatoes: If you don’t have baby potatoes, use regular-sized potatoes in this recipe instead. Just use 1.5 pounds of potatoes and evenly cut them into smaller pieces.
