Preheat your air fryer to 400°F (200°C).
Finely chop the fresh rosemary and thyme. If you don’t have fresh herbs, you can use dried herbs instead, just use half the amount of each herb.
Pat dry the chicken with paper towels. Then, evenly cut the chicken into small 1-2 inch cubes.
Add the chicken cubes to a large bowl. Then, add the olive oil and mix to coat all the chicken. After that, add the garlic, rosemary, thyme, oregano, salt, pepper, and lemon zest to the bowl. Thoroughly mix to evenly coat the chicken.
Carefully add a parchment paper liner to the air fryer basket. Then, add the chicken bites. Don’t overcrowd the air fryer basket. You may need to cook them in batches.
Air fry the chicken bites at 400°F for 10-12 minutes, or until fully cooked, when the chicken bites reach an internal temperature of 165°F. Flip the chicken bites halfway through so they cook evenly.
Once the chicken bites are fully cooked, carefully remove them from the air fryer, let them cool for a few minutes, and enjoy!
