AIR FRYER APRICOTS

Air fryer apricots are a must-try treat! The air fryer caramelizes the natural sugars in the apricots, making them incredibly soft and sweet.

Ingredients

  • 4 medium-sized ripe apricots
  • 1 teaspoon brown sugar or brown monk fruit
  • 1/4 teaspoon pumpkin pie spice
  • 1 pinch of salt
  • a light spray of coconut oil

Instructions

  • Wash and dry the apricots. Then, cut them in half lengthwise and remove the pits.
  • Mix the brown sugar, pumpkin pie spice, and pinch of salt in a small bowl.
  • Lightly spray the halved apricots with coconut oil. After that, evenly sprinkle the combined seasonings over the apricots.
  • Place a parchment paper liner in the air fryer basket. Then, place the seasoned halved apricots face-side up in the air fryer basket.
  • Air fry the apricots at 350°F for 7-10 minutes. Once done, carefully remove them from the air fryer, let them slightly cool, and enjoy! For an extra treat, serve them with vanilla ice cream or whipped cream.

  • Storage: Store leftovers in an airtight container in the refrigerator for 1-2 days.
  • Reheating: When ready to serve them again, reheat them in the air fryer for 1-2 minutes.
  • Sweetener Options: You can use brown sugar, coconut sugar, or a 1:1 sugar-free sweetener such as brown monk fruit or Swerve.
  • How To Make Pumpkin Pie Spice: If you don’t have pumpkin pie spice, you can make your own with ground cinnamon and a pinch of nutmeg, cloves, and ground ginger.
  • Apricots: While you want to use ripe apricots, ensure they aren’t over-ripe or you won’t be able to cut them and they will become too mushy.
